this is the recipe I used, and it makes an awesome kerrie beet. Its really easy to make as well.
You will need:
500 ml brown vinegar
750 ml sugar
1,5 kg's beetroot, chopped into blocks
2 large onions, finely chopped
15 ml Curry powder
5 ml salt
3 Tbsp Maizena, mixed with a little water to a paste
Mix the sugar and vinegar and heat until sugar is dissolved, bring to the boil. Add onion and beetroot. Simmer for 10 minutes, add curry and salt, and simer for a further 5 minutes. Add Maizena and stir until the liquid is thicker and smooth. Bottle warm and cap while warm.
You don't get it easier than that..
