This is the recipe I always use for bread and it has yet to fail me.
4 cups cake flour
1 teaspoon salt
4 teaspoons sugar or honey
4 teaspoons milk powder or coffee creamer
1 packet instant yeast
2 tablespoons butter or margarine
+- 1 cup of lukewarm water
Sift together the flour and salt, the add the rest of the dry ingredients. Rub the butter into the dry ingredients until it resembles fine breadcrumbs
Add just enough water to mix to a soft dough, then turn out onto a floured surface and knead for 10 minutes. Once kneaded, place in an oiled bowl and leave to rise for about 15 minutes.
After the first rising, knock down the dough and shape into the desired shape and place on a greased baking tray/ bread tin. Cover with oiled plastic or a damp tea towel and leave to rise for 30-40 minutes (until doubled in size).
Before baking in the oven, the bread can be brushed with beaten egg or milk and sprinkled with seeds or cheese. Bake in a preheated oven at 200c for 20-25 minutes for a loaf or 15-20 minutes for smaller loaves/ rolls.
This recipe can also be used to make flat breads:
After the first rising and knocking back of the dough, divide the dough into small balls and roll out into flat discs. Bake individually on a hot lightly greased pan on the stove.
