Apple-Walnut Cobbler with Cinnamon
« on: June 18, 2009, 09:35:52 pm »
This is divine!

Apple-Walnut Cobbler with Cinnamon - serves 9

5 cups of thinly sliced peeled cooking apples
3/4 cup of chopped walnuts
1/4 cup of sugar
1/2 tsp of ground cinnamon
1 cup of all purpose flour
1/2 cup of sugar
1 tsp of baking powder
1 beaten egg
1/2 cup of evaporated milk
1/3 cup of butter or margarine, melted
Whipped cream or vanilla ice cream optional
Ground cinnamon optional

Lightly grease a 2 quart square baking dish.
Spread the apples in prepared dish. Sprinkle with 1/2 cup of the walnuts.
In a small bowl stir together 1/4 cup of sugar and 1/2 tsp of cinnamon, sprinkle over the apples.
In a medium mixing bowl stir together the flour, 1/2 cup of sugar, and baking powder.
In a small mixing bowl combine the egg, evaporated milk and melted butter or margarine. Stir into the flour mixture until smooth. Pour evenly over apples, sprinkle with remaining walnuts.
Bake in a 325 degrees oven for 50 to 55 minutes or until a wooden toothpick inserted into the center comes out clean.
To serve, cut into squares. Serve warm.
If desired, top with whipped cream or ice cream and sprinkle with additional cinnamon.

Sounds lovely Bee but I'm not known for my baking skills.

Can OldSoul cook?  Eish, I hope so!  But this is easy to make.

Oldsoul and I both know how to cook. But I don't know if he can bake. I know with my baking skills - I've only ever found 1 recipe that I haven't managed to completely ruin. I think it's got a lot to do with the fact that I'm not very accurate - more a dash of this and a dash of that. And that never works with baking.

No matter how hard I try to measure correctly - I suck at it. The only recipe I can bake successfully is one with a teaspoon of this, cup of that. No exact grams. A little less or more does not spoil it.

Unfortunately it doesn't work for the rest.

I'll try it. Hopefully it's forgiving. Cos 1/2 a cup can be about 3 or 4 amounts when I'm measuring. And my coffee cups - they're quite huge.
